The rarest and most exclusive cocoa beans are used, roasted in their entire shell to protect the delicate aromas. They are yielding a more intense, more complex and deeper cocoa flavour. I source only the best 55% dark chocolate, which is sustainable for the farmers.
The dried crispy passion fruit is sourced from the best and adds a crunch to the bite.
Spices pair well with chocolate and equally fruit. In this case, the warmth of the sticky stem ginger compliments the bitterness of dark chocolate and the sharpness of the passion fruit.

We do not want to encourage everyone to turn to alcohol – this intense flavour pairs exceptionally well with a wee dram of a robust whisky – probably a 12-year-old. But if that’s not your tipple, then a strong coffee sits perfectly well.
All my chocolate is handmade by me, in very small batches. I generally produce just 12 100g bars and 12 50g bars at a time. The bars are then wrapped and labelled with care and given a four-month ‘best by’ date.
